It seems that spring is finally on its way (fingers crossed), so in honor of the gorgeous weather (as I write this I am hoping that it’s beautiful out where you are too) we thought it was time to raise our glasses to the muses.  Our favorite warm-weather cocktail?  Anything involving cucumber vodka; it’s the nectar of the gods.  Truly.  For this particular recipe, you’ll need cucumber vodka (we like Crop Harvest Earth Organic Vodka, but any kind will do), tonic water, lime juice, cucumber juice, simple syrup, and mint leaves. 

If that sounds like a lot of ingredients, or you don’t have a juicer and don’t want to spend a lot of time trying to wrench a cucumber’s juice from its stubborn flesh, I give you the simplified version: cucumber vodka, tonic water, and lime juice. A trifecta of refreshment. Oh, and adding some cucumber slices in there can’t hurt either.  Play around, have fun; shake up a cocktail then go outside to sip and enjoy.


1 cup cucumber vodka

1 cup tonic water

½ cup cucumber juice

¼ cup fresh lime juice

¼ cup simple syrup (equal amounts sugar and water heated until sugar dissolves; cool)

Handful fresh mint leave


Divide the ingredients in half, add each half to a cocktail shaker and shake to combine.  Pour over rocks glasses filled with ice and serve.  Yields 4 servings.
